一、准备工具(The preparation of the instruments):

不锈钢盘;分蛋器;面粉筛;电子称;量杯;活底的蛋糕模;手动打蛋器及电动打蛋器;橡皮刮刀

二、用料(The materials):

Eggs; Low gluten flour; Sugar; Pure milk. Salad oil

鸡蛋;低筋面粉;细砂糖;纯牛奶 ;色拉油

三、蛋糕的做法(Cake recipe)

1、Meringue: place 5 egg whites in a slightly larger egg beater and beat with an electric whisk until frothy.

蛋白霜:在稍微大一点的打蛋盘里放入5个蛋白,用电动打蛋器打至粗泡状态。

2、Add 1/3 of the sugar in the egg white (50g sugar in total), turn to medium-high speed and beat until the foam is fine, then add 1/3 of the sugar, turn to high speed and continue beating until the texture can be shown.

蛋白里加入1/3的细砂糖(共50克砂糖),转中高速打至细腻的泡沫,再加入1/3的细砂糖,转高速继续打至可呈现纹路的状态。

3、Add the rest of the sugar and continue beating until it is dry and foamed, so that when the whisk is lifted, the egg whites pull out a short, upright corner.

最后把剩下的糖都加入,继续打至干性发泡的状态,即是当提起打蛋器的时候,蛋白能拉出一个短小直立的尖角。

4、Egg yolks: in a separate whisk, place 5 egg yolks and 30g of granulated sugar. Beat with a hand whisk until light colored.

蛋黄糊:在另外一个打蛋盘里放入5个蛋黄和30克细砂糖,用手动打蛋器打匀至蛋黄颜色变浅。

5、Add 50ml salad oil (corn oil instead) while stirring, then 50ml milk.

边搅拌边加入50ml色拉油(可用玉米油代替),然后加入50ml牛奶。

6、Finally, sift in 90 grams of flour and slowly stir until smooth and fine.

最后筛入90克低筋面粉,慢慢地搅匀至光滑细腻无颗粒。

7、When the egg yolk mixture is finished, put 1/3 of the meringue into the egg yolk mixture dish. Transfer 1/3 of the meringue to the yolk batter, turning with a rubber spatula.

蛋黄糊搅拌完毕后,取1/3蛋白霜入蛋黄糊盘中,用橡皮刮刀翻拌均匀;再取1/3的蛋白霜入蛋黄糊盘中,用橡皮刮刀翻拌均匀。

8、Finally, pour the batter into the rest of the meringue pan. Mix thoroughly until smooth and fine.

最后把蛋黄糊盘中的面糊全部倒入剩下的蛋白霜盘中,完全翻拌均匀至光滑细腻无颗粒。

9、Pour the batter into an 8-inch circular cake mold and shake out the big bubbles with a few clicks on the table top.

把面糊倒入8寸的圆形蛋糕模中,在桌面上轻轻嗑几下,把蛋糕糊里面的大气泡震出来。

10、Preheat the oven for 10 minutes. Place the cake in the middle of the preheated oven.

烤箱预热10分钟,把蛋糕放入预热好的烤箱的中层,上下火,170度,40分钟。

11、Once the cake is cooked, put on a heat-resistant glove, remove it, crack it on the table, and place it upside down on the grill. When the cake has cooled completely, it can be unmoulded (with props).

蛋糕烤好了就立即带上隔热手套把它取出来,放在桌子上嗑几下,然后倒扣在烤架上,等蛋糕完全冷却后就可以脱模了(可借助道具脱模)。
